Omakase · Ramen · Tokyo, Shibuya

Scroll. The fish leaves the mark and draws the evening for you.

Otoro nigiri on a dark slate plate

壱 · Sushi

Eighteen pieces,
one breath apart

Fish flown from Toyosu each morning, aged to the hour, brushed with nikiri and set down the moment the rice is still warm. The counter seats ten. The chef decides the order.

円 · Ensō

“A meal should close the way a circle closes — not perfectly, but completely.”

Chef Rin Nakamura

弐 · Ramen

Sixty hours
of quiet fire

Pork bones held at a whisper of a boil until the broth turns to silk. Noodles cut at dawn, chashu rolled by hand, one egg cured in soy and mirin overnight.

Steaming bowl of tonkotsu ramen

波 · Seigaiha

The room moves like water — slow at the counter, restless at the pass.
